Paneer Pasanda.....my son's favorite and made it a few days ago. Paneer stuffed with green chilies, raisins and cilantro. Recipe inspired by @vahrevah and the kashmiri masala powder by @burlapandbarrel @cardozlegacy always on point!!

Ugadi Pachadi to celebrate the Telugu New Year. A dish with Shadruchulu (six tastes) and made with jaggery (sweet), tamarind (sour), raw mango (tangy/astringent), neem flowers (bitter), salt(salty)and chili (spicy), it symbolizes the experiences one encounters in life and having them together makes you accept all of it with equanimity.
Made a simple meal of payasam and mango pulihara in my son's student apartment and Sirisha @mycravesandraves
dropped off gaarelu and chutney. She drops off delicious food for my son at every festival and I count myself so fortunate to have such incredibly good human beings in my life.

Tres Leches......this recipe by @acozykitchen is a real keeper!! Not too sweet, light and fluffy and absolutely delicious. Added a very thin layer of fresh strawberries under the whipped cream and find myself going for seconds and thirds! Hope everyone is having a fabulous Sunday!

Celebrating the first day of Spring🌸🌻🌷...

Celebrating the first day of Spring🌸🌻🌷..... Hummingbird cake with cream cheese frosting. Banana, pineapple, coconut and pecans come together in a most delicious way.
For 8 mini loaves*:
3 cups all purpose flour
3 eggs
1 1/2 cups sugar
1 1/2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
4 bananas
1 cup shredded, sweetened coconut
1 cup pecans, chopped
1 8-oz can crushed pineapple
1 cup canola or vegetable oil
2 tsp vanilla

Frosting;
6 oz cream cheese, room temperature
4 tbsp butter, room temperature
1 tsp vanilla
1 1/2 cups powdered sugar

Mix the flour, baking soda, salt and cinnamon. Beat eggs lightly, add the sugar and beat till well-mixed. Add the oil, vanilla. Mash the bananas and add to the oil mixture along with the crushed pineapple with the juice. Add the flour mixture, pecans and coconut. Mix until just combined. Line the mini loaf time with parchment liners, distribute the batter evenly and bake at 350 F for approx 30 mins. Cool completely and frost.

Frosting:
Beat the butter and cream cheese together until well mixed. Add the powdered sugar and vanilla and beat till you get a smooth frosting.

A really quick and simple bell pepper curry. My go-to when I have run out of ideas and motivation 😀. Follow pretty much the same recipe for broccoli, cabbage, ivy gourd etc. #everydayfood
Happy Friday everyone!

2 large bell peppers, chopped
2 tbsp oil (I use cold-pressed peanut oil)
1 tsp mustard seeds
A generous pinch of asafetida
1 tsp coriander powder
1/2 tsp red chili powder
1/4 tsp turmeric powder
1/3 cup besan (gram flour)
1/4 cup roasted peanut powder
1/4 cup chopped cilantro
Salt to taste

Heat oil. Add mustard seeds and asafetida. When the mustard seeds start to pop, add the bell peppers. Stir and cook covered on medium flame till the peppers soften and start to char ever so slightly. Add salt, turmeric, coriander and red chili powders. Stir. Sieve in half the gram flour. Stir and then sieve in the other half and the peanut powder. Stir, cover, and cook on low flame for about 10 mins. Add the cilantro, stir and serve with rice or rotis.
