There are times when an idea for a post or a dish churns in my head for months and sometimes, even more months.  Other times it literally comes together right as I am peering into the open refrigerator.  These round Danish pancakes called Aebleskivers were one such serendipitous happenings of the latter category!

It was Christmas morning and I had no special plans for breakfast, but the small jars of jam with a few teaspoons leftover from the Linzer cookies stared right back at me when I opened the fridge.  Looking like they could use a trip through the dishwasher, I thought of consolidating their contents and rebranding them as a mixed-fruit jam.  Not entirely sold on that idea, I also thought cinnamon-like rolls, or muffins or a quick breads.  All of which involved way more work than I was ready for at that time of the morning.

Putting off the task of tackling the jams for a later time, I began to pull out some eggs and buttermilk to make a breakfast of pancakes.  My signature oat bran pancakes whose recipe lay languishing in the drafts folder of my old blog, waiting for pictures.  Made so often that I have a large Ball jar of this mix in my pantry at all times.   And just as I was mixing the batter, I remembered the Danish pancakes on a friend’s Instagram feed and right there, these jams found a new purpose.  The skillet was put away and the special pancake pan brought out.

This pancake pan serves a dual purpose in my kitchen because I also use it to make the traditional south Indian dish called ponganalu/appam.  Easily available online and in many stores, I have two of them in cast-iron – one actually bought at a local CVS pharmacy many years ago!

The pancakes are pretty simple to make.  You mix the batter, pour, turn a few times and dust with some powdered sugar.  That’s it.  You can fill it with all kinds of fillings …even chocolate and nutella.  For today, it was the jam.  It requires a few turns if want it to be perfectly spherical but even a single flip is enough to give you very pretty looking pancakes!

This is not a traditional Aebleskiver batter but works perfectly well.  Pretty healthy with both oat bran and some oat flour and light on oil/butter.  Some recipes call for separating the eggs and whipping up the whites before mixing it in.  I added the whole eggs and still ended up with light and airy pancake balls.

Also, even though the jams were low in sugar to start with, I simply dusted these very lightly with powdered sugar and they were wonderful as is.

I was reading about them earlier today and learned that these are usually served around Christmas in Denmark.  And so unknowingly, I was following a Danish tradition for Christmas – even if I served it with some coffee instead of the traditional mulled wine called Glögg 🙂

Since we are still in holiday season, I think these would be a wonderful (and healthy) option for a holiday breakfast or brunch!

Jam-Filled Oat Bran Pancakes

Printable Recipe

Mix:
1/2 cup all-purpose flour
1/2 cup oat flour
1 cup toasted oat bran hot cereal*
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp brown sugar
1 tsp salt
Pancake Balls:
Makes 14-16 

1 cup pancake mix from above
1/4 cup buttermilk
1/4 cup milk (I used 1 % milk)
2 tbsp of canola oil or melted butter
2 large eggs
1 tsp pure vanilla extract
Some oil for the pan

skewers or knitting needles to turn the pancakes
For the mix:
Run the oat bran in the mixie or food processor to make a coarse powder

Add the all-purpose flour, baking powder, baking soda, brown sugar and salt and mix well.  Store in a jar.

For the pancake balls:

Whisk the eggs in a mixing bowl for a minute until they turn lighter.  Add the buttermilk, milk, oil/melted butter and vanilla.  Mix well.  Slowly add the pancake mix and stir until well-mixed.

Heat the Aebleskiver pan on medium-high heat.  Add a few drops of oil to each well (about 1/8 tsp) and heat for a minute (should be hot enough for the batter to sizzle when poured in).

Reduce the flame to medium and pour about 1 tbsp of the batter in each well (if making filled pancakes) going in a clockwise direction and ending in the center well.

Add about 3/4 tsp jam over the batter.  Add another tbsp of batter over the jam and cover completely.

Cook for a minute.  Pierce the pointed end of a skewer through the batter to touch the wall of the well.

Lift the pancake slowly.  It will have a skin and the insides will still be liquid.  Lifting carefully, turn it around so that the bottom cooked side is now on top.  Cook for a couple of minutes more. (there are some good videos online showing the technique for get perfect spheres)

Pierce the pointed end of skewer in to test if it is done.  If it comes out clean and the bottom side is also golden brown, it is done.

Transfer to a cooling rack and dust with powdered sugar.

Serve as is or with some more powdered sugar and jam on the side.

* These are best eaten soon after they are made but you can also make them in advance and cool them before freezing.  Bring to room temperature and warm in a preheated 350 degree oven for 4-5 minutes, until the outside gets crisp and then dust with powdered sugar.

* Make sure to use the oat bran hot cereal and not the plain oat bran.  There are many brands like Bob’s Red Mill, Trader Joes,  Quaker Oats etc.

    Bina, this is such an excellent idea for breakfast and mini bites. I've never made it in this combo ever and sounds so good. I love this pan, so versatile.
    I will definitely be making it and good that you put your jam to great use.
